No Bake Pumpkin Pie

We feature this recipe, as our daughter, who took her Senior Year in high school to do a Foreign Exchange Student program in Taiwan

…did not have an oven, therefore to have the “traditional” Pumpkin Pie, she had to get creative…this is what she came up with…

1-nine inch graham cracker crust

1-.25 oz pckg unflavored gelatin

1 tsp ground cinnamon

1/2 tsp ground ginger

1/2 tsp ground nutmeg

1/2 tsp salt

1-14 oz can condensed milk

2 eggs, beaten

1-15 oz can pumpkin puree

Mix gelatin and all spices in saucepan. Add beaten eggs and condensed milk. Combine thoroughly. Place saucepan on low heat. Stir til mixture thickens. Remove from heat. Add pumpkin. Mix thoroughly. Pour into crust. Let sit for 3 hours. Add whip topping, if desired.
