Baked Artichokes

Artichokes

My daughter was the brave one cooking artichokes when she was in high school.  I loved eating them but never cooked them.  This is a very easy recipe.

4 servings
4 small artichokes
1 clove fresh garlic
5 tablespoons olive oil
salt and pepper
3-4 stalks of parsley

 

Preparation
Wash the artichokes, pluck off the outer leaves and cut in half lengthwise. In plenty of salted water to boil for 30-40 minutes, until the leaves are soft. Place in a baking dish. Cut garlic into quarters.  Drizzle with plenty of olive oil. Salt and pepper as desired. Bake in preheated oven at 200 degrees bake for about 20 minutes. Then garnish with some fresh parsley leaves.
