Crepes

From time to time I get a sweet tooth

and want to whip up something quick but delicious.  I found this quick and easy recipe that I love.  The great thing is you can use your favorite fresh fruit to make it a healthy treat.

Crepes

  • 1 cup milk (I use soy milk and works just fine)
  • 3/4 cup flour
  • 1 large egg
  • 1 egg white
  • 1 Tbsp sugar

Blend milk & eggs gently – mix well

Warm up a frying pan and spray on some Pam, fill a ladle full of batter in the pan and roll the pan to get the batter to cover the entire surface.  This should make a large thin pancake looking circle.  Once you see the batter thicken and bubble, flip.  Once the entire Crepe is cooked place on plate and prepare.  Remember, on subsequent Crepes the frying pan is much hotter and will burn the Crepe, you will want to turn the burner down to a simmer.

Once you have your Crepe finished, prepare as you like.  I place Nutella on half and then cut up Bananas on top of the Nutella.  Fold in half and then place Whip Cream on top.  You can replace with your favorite ingredients inside to satisfy your sweet tooth.
