Pasta Bean Soup

A great combination of pasta and beans for a soup.
Serves 6 | Serving Size: 1-1/2 cups
Total Time: 50 min | Prep: 5 min | Cook: 45 min
This bean soup is filling and hearty, yet takes only minutes to make!


1 medium onion chopped
1 clove garlic crushed
1 medium zucchini chopped
1 cup sliced mushrooms
4 cups broth
1/2 cup small pasta
1 16-ounce can tomatoes (no salt added)
1 15-ounce can garbanzo beans (drained & rinsed)
1/2 teaspoon basil
1/2 teaspoon thyme

Put all ingredients, except pasta, in a soup pan and bring to a boil. When boiling, add the pasta and cook soup until pasta is done.
Chef’s Tips:
Serve with a large salad or raw veggies.
